1 (16.25 ounce) package white cake mix 3/4 cup milk 1 tablespoon milk 2 eggs 3 1/2 tablespoons vegetable oil |
1.Preheat oven to 350 degrees F (175 degrees C). Spray the bottom of a 10-inch springform pan with cooking spray. 2.Measure 1 cup cake mix; set aside for crumb topping. Sprinkle crumbs over top of cake batter. 3.Bake in the preheated oven until a toothpick inserted in the center of the cake comes out clean, 30 to 35 minutes. Cool cake to room temperature in the pan. 4.Beat cream cheese, 1/3 cup confectioners' sugar, lemon juice, and lemon zest together in a bowl until smooth and creamy. Beat cream and remaining 1/3 cup confectioners' sugar together in a separate bowl using an electric mixer until stiff peaks form. Fold cream cheese mixture into whipped cream. 5.Remove cake from springform pan. Cut cake horizontally into 2 layers using a serrated knife; remove top layer. Spread filling onto the bottom cake layer; place top cake over filling. Refrigerate cake for at least 4 hours. 6.Dust cake with more confectioners' sugar before serving. | |
Gelato |
||
2 cups milk 1 cup heavy cream 4 egg yolks 1/2 cup sugar |
1.In a medium saucepan, mix milk and cream. Warm until foam forms around the edges. Remove from heat. 2.In a large bowl, beat the egg yolks and sugar until frothy. Gradually pour the warm milk into the egg yolks, whisking constantly. Return mixture to saucepan; cook over medium heat, stirring with a wooden spoon until the mixture gels slightly and coats the back of the spoon. If small egg lumps begin to show, remove from heat immediately. 3.Pour the mixture through a sieve or fine strainer into a bowl. Cover, and chill for several hours or overnight. 4.Pour the mixture into an ice cream maker, and freeze according to the manufacturer's instructions. Transfer to a sealed container, and freeze until firm. If the gelato is too firm, place it in the refrigerator until it reaches the desired consistency. |
