Mashed Potatoes

Ingredients

(1)5 pounds Yukon Gold potatoes 1/2 cup butter(2)Market Pantry Salted Butter 1-lb (3)2 cups Parmesan cheese (4)1 cup chopped fresh chives(5) 1 1/2 cups cream cheese (6)1/2 medium head garlic, (7)peeled and minced (8)1 pinch salt and pepper to taste.

Directions

Prep 5 m Cook 15 m Ready In 20 m (1)Bring a pot of salted water to a boil.
(2)Add potatoes; cook until tender but still firm.
(3) Drain and return to stove over low heat to dry for 1 to 2 minutes.
(4)Add butter, Parmesan cheese, chives, cream cheese, garlic, salt, and pepper.
(5)Use a potato masher to mash until smooth, and serve.

French Fries

Ingredients

(1) 2 1/2 pounds russet potatoes, peeled
(2)1 cup all-purpose flour
(3)1 teaspoon garlic salt
(4)1 teaspoon onion salt
(5)1 teaspoon salt
(6)1 teaspoon paprika
(7)1/2 teaspoon salt
(8)1/2 cup water, or as needed
(9)1 cup vegetable oil for frying

Directions

(1)Slice potatoes into French fries, and place into cold water so they won't turn brown while you prepare the oil.
(2)Heat oil in a large skillet over medium-high heat. While the oil is heating, sift the flour, garlic salt, onion salt, (regular) salt, and paprika into a large bowl. Gradually stir in enough water so that the mixture can be drizzled from a spoon.
(3)Dip potato slices into the batter one at a time, and place in the hot oil so they are not touching at first. The fries must be placed into the skillet one at a time, or they will clump together. Fry until golden brown and crispy. Remove and drain on paper towels.
