Queso Dip

Ingredients

2 T. Unsalted Butter 1 C. Fire Roasted Whole Green Chilis (chopped)
2 T. Flour 3 C. Cheddar Cheese (shredded)
2 C. Whole Milk 3 C. Montery Jack Cheese (shredded)
1 C. Tomatoes (diced)

Instructions

1. Add butter to a cast iron skillet on medium heat until melted before adding in the flour and whisking for 1 minute.
2. Add in the milk slowly while whisking and keeping the miute smooth for 3-4 miutes before adding in the tomatoes, chiles, cheddar cheese, and montery jack cheese.
3. Continue whisking until completely combined and smooth. 4. Serve in warmed crock with tortilla chips for dipping.
