Instructions
>Preheat the oven to 325°F (165°C). Combine graham cracker crumbs, 3 tablespoons sugar, and melted butter. Press this mixture onto the bottom and slightly up the sides of a 9-inch springform pan.Bake for 8-10 minutes, then cool while preparing the filling. Prepare the Filling: In a large bowl, beat softened cream cheese, 1 cup sugar, and vanilla until smooth.Add eggs one at a time, mixing just until blended; avoid overmixing.Pour the filling over the cooled crust. Bake and Chill:Bake for 55 minutes, or until the center is almost set with a slight jiggle.Cool gradually by turning off the oven, opening the door slightly for one hour.Remove from the oven and cool completely on a wire rack. Refrigerate for at least 4 hours, or preferably overnight, to allow it to set.
